Should all apples be turned into cider?
No.
I would miss tart tatin.
But a well made cider is a beautiful thing, and cider and apples both touch on so many interesting subjects–history, agriculture, politics, land use, foodways, literature, symbol–that it is easy to be captivated by them.
So, I drink, and I study, and I think, and I write.
That’s what it’s about.
